Peach Caprese Salad

Creamy Mozzarella and thinly shaved Prosciutto tossed with fresh peaches, blackberries and a homemade blackberry balsamic vinaigrette create a summery salad for any seasonal menu.

Ingredients

Blackberry Balsamic Vinaigrette

  • ½ cup Balsamic Vinegar
  • 2 tablespoons Honey
  • 2 teaspoons Dijon Mustard
  • 2 teaspoons Light Brown Sugar
  • 1 teaspoon Onion Powder
  • 1 teaspoon Kosher Salt
  • ½ cup Blackberries, washed
  • ½ cup Extra Virgin Olive Oil

Peach Caprese Salad Assembled

  • 12 ounces Mozzarella, sliced ¼” thick
  • 4 peaches Peach, cut into 1/8 wedges
  • 10 ounces Prosciutto, thinly shaved
  • 2 ½ cups Grape Tomatoes, golden and red, cut in half lengthwise
  • 1 ¼ cups Blackberries, washed
  • 5 tablespoons, Basil, chopped
  • 1 cup Blackberry Balsamic Vinaigrette, prepared

Directions

Blackberry Balsamic Vinaigrette

  1. In a blender pitcher, combine all ingredients and blend until smooth.
  2. Transfer to a sauce pot over medium heat and reduce mixture to approximately 1 cup in volume.
  3. Chill completely and reserve.

Peach Caprese Salad Assembled as a shared platter

  1. On a large platter, layer mozzarella, peach slices and rolled prosciutto.
  2. Top with tomatoes, blackberries and basil and drizzle the entire platter with blackberry balsamic vinaigrette.
  3. Garnish with additional basil leaves and flake salt if desired.
