Goat Cheese, Olive and Roasted Pepper Sandwich

The soft creaminess and tangy bite of Goat Cheese play against the bold flavors of black olive tapenade and marinated roasted red peppers, spread on a crusty demi-baguette and finished with fresh basil.


  • Demi baguette , 1 each
  • Black olive tapenade, ¼ cup
  • Roasted red pepper, seeded and sliced into strips, 1 each
  • Balsamic vinegar , 1 tablespoon
  • Extra virgin olive oil , 1 tablespoon
  • Goat Cheese, crumbled, ¼ cup
  • Basil leaves, cut into ribbons , ¼ cup


  1. Slice baguette in half lengthwise, leaving a hinge.
  2. Spread the black olive tapenade on the bottom half of the demi baguette.
  3. Toss the roasted red pepper strips in the balsamic vinegar and extra virgin olive oil. Then spread on top of the tapenade.
  4. Sprinkle the Goat Cheese on top of the red pepper strips. Top with basil. Close the sandwich and cut in half on a bias.
