Sun Dried Tomato Dip

Ingredients

  • 1-6 oz jar sundried tomatoes packed in oil
  • 1 C fresh Basil Leaves
  • ¼ C Pinenuts, toasted
  • ½ C Stella Hard Italian Cheese
  • 4 cloves garlic
  • 1 Tbsp Lemon Juice
  • Pinch Red Pepper Flakes
  • 1/3 C Extra Virgin Olive Oil
  • TT Salt & Pepper
  • 8 oz Mascapone

Directions

  1. Combine the first 7 items in a bowl of a food processor and drizzle in the olive oil with the blade running. Season to taste with Salt and Pepper. Serve with sliced toasted baguette.
