Cheesy Gnocchi

Ingredients
- 8 oz Frigo Ricotta
- ½ C Stella Hard Italian Cheese
- 2 Eggs
- 1 Egg White
- 6 oz DairyStar Heavy Cream
- ¾ C All Purpose Four
- Kosher Salt to Taste
Directions
- Combine ricotta, parmesan, eggs, egg whites, and cream in a bowl. Fold in flour and add salt to taste.
- Rest mixture in the refrigerator until ready to use.
- While the mixture rest, Bring a stockpot of salted water to a gentle boil.
- When ready, remove mixture from the refrigerator and roll into ¼ inch logs and cut into 1 inch pieces.
- Cook gnocchi in the simmering water. They are done once they rise to the surface. Remove them and serve warm with your favorite sauce. You could also pan fry them before saucing if desired.
