Steak & Pesto Panini

Ingredients
- Seasoned Shaved Steak
- 2 slices Saputo Gold WM Mozzarella Loaf
- 2 Tbsp Spicy Pesto Sauce (see sub recipe)
- 4 Slices Roma Tomato
- 1 C Baby Arugula
- 1 slice Italian Bread (Panini Bread)
- Spicy Pesto Sauce:
- 1/2 C Basil Pesto
- 2 Tbsp Crushed Red Pepper Flake
Directions
- In a clean medium saute pan, place on oven range over medium-high heat.
- Add seasoned shaved steak and cook through until it reaches an internal temperature of 165° and set aside until ready for use.
- 2a. In a clean mixing bowl add basil pesto and crush red pepper flakes, whisking to combine. Store in a clean container, label date and store in walk-in cooler until ready for use.
- Pre-heat panini press and begin to assemble sandwich by evenly adding spicy pesto to one slice of bread.
- On the other slice of bread, add mozzarella cheese, tomatoes, shaved steak, and arugula. And add second slice (pesto side down) onto the other sandwich half.
- Place sandwich in panini press and allow to toast, gently pressing down but now to hard.*See Notes
- One bread is completely toasted, remove from panini press and cut sandwich in half on bias. Serve immediately.
