Spinach Pesto

Ingredients

  • 2 C Spinach
  • 1 C packed fresh basil leaves
  • Zest of 1 Lemon
  • 2 cloves garlic
  • ¼ C pine nuts, toasted
  • 2/3 C extra-virgin olive oil
  • 2/3 C Stella Hard Italian, good quality
  • TT Salt
  • ½ tsp Crushed Red Pepper

Directions

  1. Combine the spinach, basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Drizzle in the Oil and process until fully incorporated and smooth.
  2. Add the parmesan to the food processor and pulse until fully incorporated.
  3. Season with salt and crushed red pepper. Serve on pasta, spread on a sandwich, use to season poultry or shrimp.
