Spinach Pesto

Ingredients
- 2 C Spinach
- 1 C packed fresh basil leaves
- Zest of 1 Lemon
- 2 cloves garlic
- ¼ C pine nuts, toasted
- 2/3 C extra-virgin olive oil
- 2/3 C Stella Hard Italian, good quality
- TT Salt
- ½ tsp Crushed Red Pepper
Directions
- Combine the spinach, basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Drizzle in the Oil and process until fully incorporated and smooth.
- Add the parmesan to the food processor and pulse until fully incorporated.
- Season with salt and crushed red pepper. Serve on pasta, spread on a sandwich, use to season poultry or shrimp.
