Ingredients
- 1 Cucumber (peeled/de-seeded)
- 2 Tbsp Sun Dried Tomato
- 2 Tbsp Pickled Red Onions
- 1 C Sweet Peppers (cut into rings)
- 1/4 C Kalamta Olives (pitted)
- 2 oz Red Wine Vinaigrette (sub recipe)
- Montchevre Goat Cheese Crumbles as needed
- 1 Tbsp Italian Parsley (minced)
- 1/4 tsp Lemon Zest
- Oregano as needed
- Red Wine Vinaigrette:
- 1/4 C Red Wine Vinegar
- 1 tsp Kosher Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/2 tsp Granulated Sugar
- 1 Tbsp Dijon Mustard
- 1 C Extra Virgin Olive Oil
- 1 tsp Italian Season
Directions
- Using a vegetable peeler, peel cucumber and on a clean cutting board split cucumber down the middle and remove seeds using a clean spoon or gloved hands.
- Combine sun dried tomatoes, pickled red onions, sweet peppers, kalamata olives, goat cheese, minced Italian parsley and red wine vinaigrette into a clean mixing bowl; tossing vegetables to evenly coat in dressing.
- Assemble salad into a clean salad bowl and garnish with lemon zest and torn fresh oregano.
- Red Wine Vinaigrette:
- In a clean non-reactive container combine red wine vinegar, kosher sald, black peper, garlic powder, granulated sugar, dijon mustard, olive oil and Italian seasoning and securly close.
- Shake container vigourously until all ingredients are combined and emulsified.
- Label and date and store in walk in cooler into ready for use.
