Directions

  1. Heat oven to 350F.
  2. In saucepan, combine heavy cream, whole milk, and vanilla extract.
  3. In mixing bowl, combine sugar and egg yolks.
  4. In another mixing bowl add goat cheese.
  5. Bring saucepan to a simmer over medium heat for about 15 minutes.
  6. Gradually pour egg mixture into the milk mixure. Continually whisking for 10 minutes.
  7. Whisk in Montchevre Goat cheese. Whisk until all combined. Heat for 5 minutes.
  8. Into a bowl, Pour mixture througha fine-mesh sieve.
  9. Pour mixture into Ramekins. Place Ramekins into a half-pan with an inch of water. Bake for 40 minutes. Cool to room temperatur and refigerate for at least 4 hours. (6 recommended)
