- Chef Nikki’s Tips:
- Place your butter in the freezer and then grate it on a cheese grater for yummy, flakey and easy biscuits! Take the frozen stick of butter and roll it in flour then grate away. You can pre-grate and store in the freezer to make biscuits on the fly!
- If you don’t have buttermilk don’t worry! The combo of the acid and the dairy are what works in recipes so here are 2 substitutions for buttermilk:
- Thin out sour cream or yogurt with water to buttermilk consistency,
- Make your own buttermilk by using 1 cup of milk or 1/2 cup evaporated milk & ½ C of water and add 1 tbsp lemon juice or white vinegar. Let stand for 5 min before using.
- Bake off the biscuits until they are just gently brown, then cool and freeze. Reheat in a 400 degree oven for 5 minutes, they will be good as new!
