Cheddar Scallion Biscuits

Ingredients

  • 2 sticks butter, frozen then grated on a cheese grater or in a food processor
  • 5 C All Purpose Flour
  • 3 Tbsp Baking Powder
  • 1 Tbsp Kosher Salt
  • 2 C Buttermilk ** If you don’t have buttermilk see below for substitutions
  • 1 bunch Scallions
  • 12 oz Black Creek Cheddar Cheese, small dice (**the dice is Key!)
  • 4 Tbsp Butter, melted

Directions

  1. Preheat Oven to 475 degrees.
  2. In a large bowl combine flour, salt and baking powder and mix well.
  3. Add the frozen grated butter to the flour mixture and make sure it is well dispersed.
  4. Make a well in the center of the mix and add the buttermilk.
  5. Stir just until the dough comes together, it will be sticky.
  6. Turn dough out on a lightly floured surface and pat into a large rectangle, about 1 inch thick.
  7. Cut evenly into squares or rectangles.
  8. Place biscuits on a parchment lined baking sheet, brush with melted butter and sprinkle with kosher salt.
  9. Bake for 15 minutes or until lightly browned.
  10. Biscuits are best served warm!
  11. **if you want to jazz up basic biscuits add 8 oz sharp cheddar, cut into 1/4inch cubes and 1 bunch of green onions sliced thin just before you add the buttermilk.
  12. Chef Nikki’s Tips:
  13. Place your butter in the freezer and then grate it on a cheese grater for yummy, flakey and easy biscuits! Take the frozen stick of butter and roll it in flour then grate away. You can pre-grate and store in the freezer to make biscuits on the fly!
  14. If you don’t have buttermilk don’t worry! The combo of the acid and the dairy are what works in recipes so here are 2 substitutions for buttermilk:
  15. Thin out sour cream or yogurt with water to buttermilk consistency,
  16. Make your own buttermilk by using 1 cup of milk or 1/2 cup evaporated milk & ½ C of water and add 1 tbsp lemon juice or white vinegar. Let stand for 5 min before using.
  17. Bake off the biscuits until they are just gently brown, then cool and freeze. Reheat in a 400 degree oven for 5 minutes, they will be good as new!
