Blue Cheese Spinach Dip

Ingredients
- 2 Tbsp Olive Oil
- 1 medium Onion, small dice
- 3 cloves Garlic, minced or grated
- 12 oz frozen spinach, defrosted and liquid squeezed
- 12 oz Cream Cheese, softened
- ¾ C Mayonnaise
- 2/3 C Saputo Sour Cream
- 1 tsp Dijon Mustard
- 2/3 C Crumbled Bacon
- 2/3 C Shredded Saputo Gold Mozzarella Cheese
- 1 C Treasure Cave Crumbled Blue Cheese
- 3 scallions, sliced thin
- TT Salt & Pepper
Directions
- Preheat oven to 400 degrees.
- Add olive oil to a medium sauté pan and cook onions and garlic until soft, about 5 minutes. Set aside to cool.
- Cream together softened cream cheese, sour cream, Dijon and mayo. Add remaining ingredients including the sauté and mix until well combined. Place in an oven safe, bakeable dish and bake for 20 minutes or until hot and bubbly.
