Bitter Green Pasta Salad

Ingredients
- 1 Grilled-Julienned Raddichio
- 1 Tbsp Olive Oil
- 1 Tbsp Kosher Salt
- 2 C Shredded Kale
- 1/2 C Belgium Endive
- 2 oz White Balsamic Blue Cheese Dressing (sub recipe)
- 2 Tbsp Toasted Almonds
- 1/2 C Marinated Farfalle Pasta
- 2 Tbsp Chopped Tart Cherries
- White Balsamic Blue Cheese Dressing:
- 3 oz White Balsamic Vinegar
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Tobasco Sauce
- 1 ea Garlic Clove (minced)
- 1 Tbsp Honey
- 1/2 Tbsp Dijon Mustard
- 1 C Vegetable Oil
- 1/4 C Extra Virgin Olive Oil
- 1/3 C Treasure Cave Blue Cheese Crumbles
- Marinated Pasta:
- 1 lb Farfalle Pasta
- 6 C Water
- 1 Tbsp Kosher Salt
- 1 Bottle Italian Salad Dressing
Directions
- Pre-heat gas grill to high heat. Using a clean knife and cutting board, cut radicchio in half and set aside in a clean mixing bowl.
- Drizzle olive oil over the radicchio coating evenly and season with .5 tbsp(s) of Kosher salt.
- Grill radicchio (flat side down) for 3-4 minutes or until leaves begin to char, turn and grill for an additional 2-3 minutes. Once charred, return to mixing bowl and allow to cool before cutting into juilenne strips.
- While the radicchio is cooling, using a cutting board and knife, cut endive in half and cut into 1/4-in' strips. (Wash and spin endive)
- Once cool, cut radicchio into 3/4-in' strips (rough cut) and return to a clean mixing bowl along with endive and kale.
- Add balsamic blue cheese dressing to mixing bowl and coat greens evenly. Once greens are coated add toasted almonds and pasta to your mixing bowl
- Plate bitter greens in a clean salad bowl and garnish with chopped dry cherries.
- White Balsamic Blue Cheese Vinaigrette:
- Combine white balsamic vinegar, kosher salt, plack pepper, Tabasco, minced garlic, honey, and dijoin mustard into a clean container.
- Using immersion blender slowly add both vegetable and olive oil to the balsamic vinegar mixture and blend thoroughly until fully combined.
- Add blue cheese crumbles to container. Apply lid and shake until blue cheese crumbles are distributed in dressing.
