Bacon Cheddar Dip

  1. Melt the butter in a saucepan over medium-low heat; remove from heat.
  2. Stir in the flour, and dry mustard.
  3. Put the saucepan back on the heat and cook, stirring, for 1 minute.
  4. Gradually add milk or light cream, stirring until well mixed.
  5. Continue cooking, stirring constantly, until thickened and smooth.
  6. Reduce the heat to low and simmer, stirring frequently, for 5 minutes.
  7. Add the cheese and cook, stirring, until the cheese has melted and the sauce is smooth and well blended.
  8. Taste and season with salt and pepper. Enjoy.
