Three-Cheese Mac & Cheese

Meet your new signature Mac & Cheese: tender noodles baked in a sinfully creamy three-cheese sauce rich with nutty Parmesan Cheese, smooth-melting Cheddar Cheese and velvety Stella® Fontinella® Cheese, subtly infused with smoked bacon. Served blanketed with a toasted Parmesan-parsley-thyme crust for an authentic homestyle presentation.


Elbow macaroni noodles, cooked al-dente, 1 cup

Cheese Sauce

Unsalted Butter, 3 T

A/P Flour , 3 T

Whole Milk, 2 cups

9 Month Cheddar Cheese, 1 cup

Fontinella® Cheese, ½ cup

Fresh Cracked Black Pepper, TT

Kosher Salt, TT

Smoked Bacon, chopped, 2 slices

Parmesan Cheese-Herb Crust

Panko Bread Crumbs, 1/8 cup

Parmesan Cheese- Grated, 1/8 cup

Fresh Parsley, chopped, ½ tsp

Fresh Thyme, chopped, ¼ tsp


  1. Preheat oven to 450ºF.
  2. Meanwhile, for the cheese sauce, in a medium sauce pot over medium heat, whisk flour into butter until completely incorporated.
  3. Add milk, a ¼ cup at a time, bring to a rolling boil each time.
  4. Once milk has been added, remove from heat and add remaining cheese sauce ingredients and whisk until all cheese has melted.
  5. For the herb crust, add all ingredients into a small mixing bowl and incorporate well.
  6. To assemble, in a large Dutch oven or cast iron skillet, add cheese sauce to noodles and mix well. Top with parmesan-herb crust and bake for 15-20 minutes, or until golden and bubbly.
  7. Remove from oven and serve immediately.

Yield: 1 Serving
