Texas Grilled Cheese with Fried Green Tomatoes

There’s a whole lot of Texas in this grilled cheese: Tangy Cheddar Cheese smoked twice for robust flavor melts smoothly over herbed breadcrumb–coated fried green tomatoes and thick-cut bacon on garlic-buttered Texas toast.


  • Black Creek® Double Smoked Cheddar cheese, slices, 16 each
  • Texas Toast, slices coated with garlic butter, 8 slices
  • Fried green tomatoes with herbed breadcrumb coating, slices , 8 each
  • Braised or thick-sliced bacon, cooked, 8 slices


  1. Preheat an oven to 350ºF.
  2. Place Texas Toast on a sheet pan in oven for 6 minutes. Remove from oven and place 2 slices cheese on each slice of Texas Toast; place back in oven for an additional 2 minutes.
  3. Remove the tray from the oven, place the fried green tomatoes on 1 slice; lay bacon over top of tomatoes; cover with another slice Texas Toast.

Yield: 4 servings

Kitchen Tips

  • To kick up the flavor even further, season the breadcrumb coating with cayenne pepper or pair the cheese with a chipotle aioli.
