Pesto Ricotta, Roasted Broccoli and Grilled Chicken Calzone

By combining the rich creaminess of premium Ricotta Cheese with the classic bold flavors of pesto, we’ve transformed the traditional calzone recipe into something truly memorable.


  • Ricotta, 1 pound
  • Pesto, ½ cup
  • Broccoli, 2 bunches, roasted
  • Grilled Chicken, 8 oz.
  • Mozzarella, 1 cup
  • Roasted Red Pepper, 1/2 cup, diced
  • Pizza Dough, 2-16oz. balls


  1. In a large bowl mix together ricotta and pesto, until fully combined. Add Chicken, broccoli, mozzarella and peppers to bowl and mix again.
  2. Divide pizza dough into 4 equal portions. Roll out Pizza dough in an 8 inch circle. Place filling onto 1 half of dough, fold over and crimp.
  3. Brush with egg wash and bake for 15 minutes or until golden brown on a pizza stone at 400F°.

Yield: 4 Calzones
