Hearty Potato, Bacon and Gorgonzola Flatbread

Potatoes and robust Gorgonzola Cheese are at the heart of this satisfying flatbread, brushed lightly with extra-virgin olive oil and rounded out with the smokiness of bacon, sweet caramelized onions and Fresh Asiago Cheese that melts well into the ingredients to add a sweet, nutty flavor.


  • Thin flat bread , 1 each
  • Extra virgin olive oil , 1 tablespoon
  • Fresh garlic, minced , 1 clove
  • Bacon strips, cooked crisp and crumbled, 2 each
  • Gorgonzola Cheese, crumbled , ¼ cup
  • Onions, sliced and caramelized , ¼ cup
  • Potatoes, peeled, diced and parboiled, ½ cup
  • Asiago Cheese, shredded , ½ cup


  1. Preheat oven to 450ºF.
  2. Brush the thin flat bread lightly with olive oil, and sprinkle the clove of garlic over the bread.
  3. Top the flatbread with bacon, Gorgonzola Cheese, onions, potatoes, and Asiago Cheese. Place in oven and bake for 5-10 minutes, or until cheese is melted and bubbly.
  4. Remove from oven and slice into strips. Serve immediately.

Yield: 1 Serving
