Gorgonzola and Steak Flatbread

Everything your guests love in a steak dinner and more, without the knife and fork: Slices of perfectly grilled skirt steak are spread over a brushing of extra-virgin olive oil on crispy flatbread and surrounded by caramelized onions, fresh tomato and garlic. Mozzarella Cheese melts atop to bring an appetizing stretch of cheese, and the piquant flavor of crumbled Gorgonzola Cheese brings sophistication.

Ingredients

  • Thin flat bread , 1 each
  • Extra Virgin Olive oil, 1 T
  • Fresh Garlic, 1 clove
  • Prime Skirt Steak, cooked medium, sliced, 4 oz. (weight)
  • Mozzarella Cheese, ½ cup
  • Onions, sliced, caramelized, ¼ cup
  • Tomatoes , ¼ cup
  • Gorgonzola Cheese, crumbled, ¼ cup
  • Scallion, sliced thin , 1/8 cup

Directions

  1. Preheat oven to 450ºF
  2. Brush the thin flat bread lightly with the olive oil and rub the clove of garlic over the bread.
  3. Top the flatbread with the sliced steak, cheese, onions, tomatoes and Gorgonzola Cheese. Place in oven and bake for 5-10 minutes, or until cheese is melted and bubbly.
  4. Remove from oven and top with sliced scallions.
  5. Slice into strips and serve immediately.

Kitchen Tips

  • Assembling plates like this allows your guests to eat richer meals that still feel light.
  • Specialty cheeses atop pizza and flatbread are exciting, but don’t stop there. Including a layer of a Mozzarella Cheese can blend the topping ingredients together and provide the desirable texture and smooth bite of melted cheese.
