Everything Roast Beef Sandwich

Serve up the satisfying taste and textural experience of thinly sliced roast beef, crunchy watermelon radishes and baby arugula piled high on an Everything bagel. A cool Blue Cheese spread brings it all together and sends flavor to new heights.

Ingredients

Blue Cheese Spread

  • 1 ¼ cup Blue Cheese, crumbled
  • 1 ¼ cup Whole Milk Greek Yogurt, plain
  • 5 teaspoons Apple Cider Vinegar
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Mustard, ground

 

 

Sandwich Assembled

  • 10 each Everything Bagel, toasted
  • 1 ¼ cups Blue Cheese Spread, prepared
  • 5 each Watermelon Radishes, thinly sliced
  • 5 cups Baby Arugula
  • 30 ounces Roast Beef, thinly sliced

Directions

Blue Cheese Spread

  1. In a medium bowl, combine all ingredient and mix to thoroughly combine.
  2. Transfer to air-tight container and store refrigerated until needed.

Sandwich Assembled per portion

  1. On the heel and crown of the toasted everything bagel, spread 2 tablespoons of prepared blue cheese spread.
  2. On the crown of the bagel, layer ½ cup arugula, ½ cup sliced watermelon radish, 3 ounces roast beef and the heel of the bagel.
  3. Serve with desired accompaniments.
