Chilaquiles Verde

Fresh, tangy Feta Cheese adds balance to a flavorful breakfast bowl featuring warm salsa verde, fresh avocado, grape tomatoes and a pair of sunny side up eggs.


  • 10 cups Tortilla Chips
  • 10 cup Salsa Verde, prepared
  • 2 ½ cup Grape Tomatoes, sliced in half lengthwise
  • 2 ½ cups Avocado, diced
  • 20 each Eggs, cooked sunny side up
  • 1 ¼ cups Feta Cheese, crumbled
  • 5 tablespoons Cilantro, chopped


  1. In a cast iron skillet over medium heat, warm 1 cup of salsa verde to a simmer.   
  2. Add 1 cup of tortilla chips and toss to coat with salsa verde. Continue to simmer until chips are lightly softened.
  3. Remove from the heat and transfer to desired serving dish.
  4. Top with ¼ cup grape tomatoes, ¼ cup avocado, 2 eggs cooked sunny side up, 2 tablespoons of crumbled feta and ½ tablespoon chopped cilantro.
  5. Serve immediately.
