Blue Cheese Walnut and Caramelized Onions Pizza

Yield: 1 Serving
Portion Size: 1 Pizza

Sink your teeth into a pizza overflowing with fresh flavors. The sweet and savory combo of caramelized onions with toasted walnuts blends beautifully with the creaminess and tang of Blue Cheese. And, a rich layer of deliciously melted Mozzarella Cheese makes sure every bite is to die for.


  • Pizza Dough, 15 oz.
  • Extra Virgin Olive Oil, as needed to brush crust
  • Mozzarella Cheese,1 cup
  • Blue Cheese, ½ cup
  • Sweet Onion, Caramelized, 3 ounces
  • Beer, Light Ale or your preference,1 cup or 8 oz.
  • Walnuts, Rough Chopped and Toasted, 2 ounces
  • Fresh Ground Black Pepper, To Taste


  1. Preheat oven to 400° F.
  2. Roll pizza dough to 16 inches in diameter.
  3. Place on baking sheet and then brush olive oil onto the dough.
  4. Caramelize the onions in a skillet until starting to turn brown. Add 1/3 of the beer to the pan and allow to reduce until onions start to brown again. Repeat this step 3 times.
  5. For the final caramelization of onions, cook on lower heat until the perfect golden brown color.
  6. Top with ¼ cup crumbled Blue Cheese, and 1 cup of the Mozzarella Cheese.
  7. Top cheese with caramelized onions and toasted walnuts evenly across crust.
  8. Bake in 400°F oven for 15-20 minutes, rotating halfway through or until crust is crispy.
  9. Remove and top with remaining ¼ cup Blue Cheese, and fresh ground pepper to taste.
  10. Cut and serve immediately.
Chef’s Tip: Substitute toasted walnuts with shiitake mushrooms.
