Blue Cheese Bruschetta

Blue Cheese Bruschetta

French baguette slices are toasted with a savory spread of rich Blue Cheese, heavy cream and garlic, then covered with roasted asparagus tips, intense Blue Cheese crumbles and mounds of sweet caramelized onions.


  • Olive oil, 1/3 cup, divided
  • Small red onion, thinly sliced, 2 each (2 cups sliced)
  • Balsamic vinegar , ¼ cup
  • Baguette, sliced into 20 pieces on a bias, 1 each (14 oz baguette)
  • Garlic clove, minced , 2 each
  • Blue Cheese , 2/3 cup
  • Heavy cream, ¼ cup
  • Asparagus Tips, roasted , 1 cup
  • Blue Cheese, crumbled , ¼ cup
  • Cracked black pepper, 1 teaspoon


  1. Preheat oven to 400ºF
  2. In a medium sauté pan, add 2 tablespoons olive oil over medium heat. Add onions and sauté for 10-15 minutes or until they begin to caramelize. Turn heat to low and add vinegar. Sauté for another 5-10 minutes or until onions are fully caramelized. Set aside.
  3. Lay baguette slices in one layer on a sheet pan.
  4. In a small bowl, blend ¼ cup olive oil, minced garlic, Blue Cheese, and heavy cream until smooth. Divide evenly among the baguette slices and spread to a thin layer. Bake for 7 minutes.
  5. Remove the baguettes from the oven and top with the caramelized onions, roasted asparagus, remaining Blue Cheese, and cracked black pepper.
