Balsamic-Glazed Caprese Skewers with Ciliegine

Refine the classic Caprese salad with individual skewers of alternating cherry tomatoes, milky Fresh Mozzarella Cheese Ciliegine, and basil leaves drizzled with olive oil and balsamic reduction. The dairy cheese pairs wonderfully with the acidity of the tomato and vinegar.


  • Aged Balsamic Vinegar Reduction, 1 Tbsp.
  • Ripened Cherry Tomatoes, Rinsed, 2 each
  • Extra Virgin Olive Oil, 1 tsp.
  • Salt, Kosher to taste
  • Black Pepper, Freshly Cracked to taste
  • Wooden Skewers, 4 to 6 inch , 1 each
  • Fresh Mozzarella Cheese-Ciliegene , 1 each
  • Fresh Basil Leaves, Cleaned, 1 each


  1. Place balsamic vinegar in a small sauce pan over medium-low heat. Reduce by half, pour and set aside into a small container. Thicken to a honey consistency.
  2. Grab the wooden skewer; place one tomato, one Fresh Mozzarella Cheese-Ciliegene, and one basil leaf, then repeat one more time.
  3. Drizzle the olive oil over the skewers then season with salt and pepper to taste.
  4. Drizzle the plate with the balsamic reduction.
  5. Place the Caprese skewers on the plate and serve.
  6. Chef’s Tip: Toss the ingredients into mixing bowl with some day old bread for a fabulous Italian tomato, Fresh Mozzarella Cheese and bread salad.

  • For another twist on Caprese salad, toss ingredients in a mixing bowl with cubes of day-old Italian bread for a seasonal panzanella.
  • Replace the cherry tomatoes with slices of roasted red peppers for an unexpected smoky flavor.
