Asiago Bruschetta Chicken Sandwich

The always-reliable grilled chicken sandwich gets a mouthwatering update with the deep and nutty flavor of a well-aged Fresh Asiago Cheese, chopped garlic and diced heirloom tomato bruschetta mix on top of a thick spread of basil aioli on a toasted ciabatta bun.

Asiago Bruschetta Chicken Sandwich


  • Ciabatta bread, 1 loaf
  • Extra Virgin Olive Oil, 1 T
  • 6 oz Chicken breast, grilled, 1 each
  • Bruschetta Mix (recipe follows), ¼ cup
  • Basil aioli (recipe follows), 2 T
  • Leaf Lettuce, 1 leaf
  • Red Onion, sliced, 2 rings
  • Asiago cheese , 5 shavings


Bruschetta Mix

  • Large Heirloom Tomato, diced, 1 each
  • Fresh Basil, chopped, 3 T
  • Fresh Garlic, chopped, 1 clove
  • Kosher Salt, TT
  • Fresh Cracked Black Pepper, TT

Basil Aioli

  • Mayonnaise, 1 cup
  • Fresh Basil, chopped, ½ cup
  • Fresh Squeezed Lemon Juice, 2 T
  • Kosher Salt, 1 tsp
  • Fresh Cracked Black Pepper, 1 tsp


  1. Toast ciabatta bun over medium heat, with olive oil, until browned and crisp.
  2. Assemble the sandwich in the following order: ciabatta bun heel, grilled chicken, bruschetta mix, basil aioli, leaf lettuce, red onion, Asiago Cheese and bun top.
  3. Serve immediately.

Yield: 1 Sandwich
