Fig and Balsamic Goat Cheese Ice Cream

A Fig and Balsamic Goat Cheese adds sophisticated taste, with the sugars of fruit and sour notes of cheese, as well a super-premium mouthfeel to this luscious house-made ice cream.

Ingredients

  • Fig & Balsamic Goat Cheese,¾ cup
  • Whole milk, 2 cups
  • Cornstarch , 1 Tbsp.
  • Sea salt, fine, ¼ tsp.
  • Heavy cream, 1 ¼ cups
  • Sugar, 2/3 cup
  • Light corn syrup, ¼ cup
  • Pecan pralines, 12 each

Directions

  1. Mix 3 tablespoons of the milk with the cornstarch, set aside
  2. In a stand mixer add the goat cheese and the salt to the bowl, mix until smooth
  3. In a 4 quart pot over medium high heat add the rest of the milk, cream, sugar and corn syrup, bring to a boil for 4 minutes, shut off the heat and whisk in the cornstarch slurry. Place the mixture back onto the heat for 1-2 minutes until the sauce thickens.
  4. Temper the whisked goat cheese into the hot milk
  5. Mix until smooth
  6. Rapidly chill the ice cream base in an ice water bath
  7. Place mixture into an ice cream mixer and spin until thick and cold, approximately 30 minutes. Freeze
  8. Serve with pieces of the praline
